Gram's Potato Rolls

Soft yeasted potato bread formed into individual rolls

Ingredients

  • 1 package active dry yeast
  • 1/2 cup water luke warm
  • 1 cup granulated sugar
  • 2/3 cup vegetable shortening
  • 1.5 tsp salt
  • 2 eggs
  • 1 cup mashed potatoes
  • 1 cup scalded milk milk heated until it just begins to bubble then removed from heat and cooled
  • 6-8 cups bread flour

Instructions

  • Combine yeast packet with warm water. Set aside.
  • In a large bowl cream sugar, shortening, and salt.
  • Add eggs and mashed potatoes and then add yeast mixture. Mix until combined.
  • Add cooled milk and flour, alternating until a soft dough is formed.
  • Turn out dough onto a floured surface and knead adding additional flour if the dough becomes sticky. Knead until the dough is smooth and elastic.
  • Let dough rise in a greased bowl until doubled in size
  • Punch down and shape into rolls. Place rolls on baking sheets, cover and let rise again.
  • Bake in a 400 degree oven for 10-15 minutes or until golden brown.
  • Immediately on taking out of the oven rub the top of each roll with margarine.

Notes

Have fun with the shaping/sizing of the rolls. We have made everything from hotdog buns to bread loafs with this dough. Just be thoughtful about your cook time/temp depending on what you make.
